Frozen Friday: Claim Jumper - Lasagna with Meat Sauce

Claim Jumper's Lasagna with Meat Sauce frozen dinner features over a pound of the Italian staple (and Garfield favorite) and is a convenient alternative to spending the time to bake a lasagna, especially if you don't have a family to feed. It retails for around $3.99 but goes on sale now and again for around $2.

Lasagna is one of those dishes that turns out pretty well in the microwave and most frozen dinner brands have some version of it. Claim Jumper's version is pretty good and enough to feed two people. It's a fairly standard lasagna with layers of ricotta cheese, a thickened meat sauce, and lasagna pasta topped with melted mozzarella cheese.
All the ingredients were well-distributed and there was plenty of meat mixed into the tomato sauce. The sauce was a good blend of tomato tartness with a touch of sweetness and herbs.
If I had a complaint, I would have liked to see some diced onions and green bell peppers just for a little more variety of flavors and some added texture. Then again, those vegetables would turn pretty soggy in the microwave so perhaps it is better that they weren't included.

Overall, Claim Jumper makes a pretty good (and hefty) microwavable lasagna dinner.
