Frozen Friday: Fresh & Easy - Eatwell Chicken Enchilada

Fresh & Easy's Eatwell Chicken Enchilada features a chicken enchilada with red sauce and a side of Mexican-style rice.

A 9-ounce box retails for $1.99, which is comparable to the sale prices of other similar frozen meals.

The Eatwell line is a better-for-you line similar to Lean Cuisine and Healthy Choice with lower calories, fat, and sodium than the more standard frozen meals.

While the picture shows a nice lacing of melted cheese on the enchilada, mine was curiously MIA. It looks like it melted down into the folded edge of the enchilada and I didn't get much taste or texture out of it.

The sauce had a slightly seasoned chili flavor, but not much heat. Unlike most enchilada sauces I've tried, this one had a bit of a creaminess to it which was different, but nice.

Inside the corn tortilla, the chicken was juicy, tasty, and tender. It wasn't exactly overflowing, but there was an adequate amount of chicken inside along with some diced green bell peppers thrown in.

The rice had a good texture; not sticky or dry. It was slightly greasy and could have used some more seasoning. I'm used to some notes of tomato for Mexican rice, but I couldn't really pick it out here. The vegetables and the beans provide a little flavor though.

Overall, I thought Fresh and Easy's Eatwell Chicken Enchilada was pretty decent, especially as better-for-you frozen cuisine. It turned out better than the few times I've tried to make chicken enchiladas at home. My only real nitpicks are the lack of cheese and bland rice.
