Frozen Friday: Fresh and Easy - Ancho Chili Chicken with Cilantro Rice

Fresh and Easy's Ancho Chili Chicken with Cilantro Rice features roasted white meat chicken over cilantro rice with tomato sauce, corn, black beans, and pepper.

It comes in a 10-ounce box and, like most Fresh and Easy brand frozen entrees, it sells for $1.99 each.

The chicken in this one amounted to maybe six slices, but out of the microwave, it looked like the chicken was MIA because it was hidden underneath the veggies, beans, and tomato sauce. Six slices isn't much, but they had a pretty good, lightly-sweet, seasoned flavor to them, as well as a slight kick. They weren't exactly tender though. They were more like firm and a little dry.

If you've often thought that cilantro rice wasn't cilantro-y enough, Fresh and Easy's version is the thing for you. There's a substantial and unmistakable cilantro flavor in every bite. The rice itself is cooked just right; not too firm and not too mushy.

The vegetables, beans, and tomato sauce were all in good order and each delivered a distinct and different flavor to the dish, as well as quite a bit of texture.

Overall, I liked the diverse but balanced flavors in Fresh and Easy's Ancho Chili Chicken with Cilantro Rice. The rice was cooked perfectly and the chicken was tasty if a little dry. The vegetables were average and decent.
