Review: Starbucks - Egg White and Roasted Red Pepper Sous Vide Egg Bites

Starbucks' Egg White and Roasted Red Pepper Sous Vide Egg Bites feature cage-free egg whites with Monterey Jack and cottage cheese, plus spinach and fire-roasted red bell peppers, cooked in a temperature-controlled water bath after vacuum sealing.

A pair of Egg Bites cost me $4.45.

Appearance-wise, these Sous Vide Egg Bites are rather appealing due to the pleasing vegetable colors. They do have a sheen to the exterior and are both wet and oily to the touch. It's not exactly pleasant to handle.

Unfortunately, the Egg White and Roasted Red Pepper Sous Vide Egg Bites don't match up to the Bacon and Gruyere version. The primary culprit seems to be the fact that it is made with only egg whites, so it doesn't set to the same texture as the whole-egg version. These Sous Vide Egg Bites have a mouthfeel that is similar to mashed potatoes in terms of consistency, but the texture is so smooth that it's like a paste. The egg white is less set and a little wetter in the center, probably due to the moisture content from the included vegetables.

Whereas the texture are the Egg White and Roasted Red Pepper Sous Vide Egg Bites' downfall, the taste is their saving grace. These Sous Vide Egg Bites have a nice flavor that is also cheese forward like the non-vegetarian version. You can taste the tanginess of the cottage cheese most prominently, but there is a hint of the roasted pepper flavor from the pepper jack cheese. They feel less fatty overall than the Bacon and Gruyere version. The bell peppers add a little bite and nice pop of flavor when you encounter them, but the spinach is basically nonexistent in taste. It probably didn't help that there was very little of it to begin with.

Overall, I would not get the Egg White and Roasted Red Pepper Sous Vide Egg Bites again simply because I am a meat eater. The Bacon and Gruyere version is vastly superior in not only flavor, but most importantly, in texture. I couldn't get over the strange pastiness of the egg white version, even though I liked the flavor profile plenty.
