The ice cream sandwich was fairly small and snackable. There are strong, warm spices (cinnamon and ginger), and brown sugar notes from the soft gingerbread cookies. They're not so soft that they stick to your finger like the traditional chocolate ice cream sandwiches I grew up eating, but they're easy to bite into without much in the way of crumbs dropping.
The vanilla ice cream is flecked with vanilla beans, but the vanilla flavor struggles to come across as the gingerbread cookies are definitely the star of the show. The ice cream was sweet and creamy.
Overall, Trader Joe's Gingerbread Ice Cream Sandwiches were really nice and definitely worth a try if you're a fan of soft gingerbread and ice cream. Both the flavor and the appearance fit the holiday season well.
