Frozen Friday: Healthy Choice - Lemon Herb Chicken

Healthy Choice's Lemon Herb Chicken frozen entrée features chicken tenderloins with whole grain pasta, cherry tomatoes, and green beans in a herb lemon-Chardonnay sauce. It clocks in at 8.7 ounces and a very low 200 calories.

Like other Healthy Choice Steaming Entrées, it costs $2.99 in my area or around $2.00 on sale.

I'm not a huge fan of lemon herb chicken, but Healthy Choice's rendition was pretty good.

The pasta was tender, but firm (whole grain pastas seem to do this very well) and wicked a good amount of sauce.

The sauce was herby, tart and citrusy, but not overly so, balanced, and not overly salty. I didn't have a problem with there being too much sauce like I sometimes do.

The green beans turned out well and the cherry tomatoes added a burst of tartness when I bit into them.

The chicken was a little dry, but good otherwise.

Overall, I enjoyed Healthy Choice's Lemon Herb Chicken more than I thought I would. I was especially pleased with the various textures and the restrained use of lemon.
