The name derives from the little red sticks that the folks at McIlhenny Company, the makers of Tabasco sauce, use to determine when a pepper is perfectly ripe (when the color of the stick and peppers match, the pepper is ready).
The strips are made with chicken tenderloins and marinated in a blend of Tabasco and cayenne. The breading is the same as you'd find on Popeye's regular chicken strips.
They're available with Cajun Fries, a buttermilk biscuit, and new Smok'n Pepper Ranch dipping sauce for $3.99.
