While a snickerdoodle is basically a sugar cookie rolled in cinnamon and sugar, a Biscoff cookie is a brand of crispy, cinnamon-spiced biscuits known as a speculoo. They're most likely included instead of snickerdoodles because they retain their texture in the shake better than snickerdoodles.
