While they call these "nachos," it's not all that cheesy as much as it is meaty. And, when they say "bold," they mean spicy; there's a fair amount of heat to the sauce. Also, you can't really eat these with your fingers without making a mess of it.
The potatoes were actually fairly firm rather than mushy and the peppers, while relatively few, added a roasted sweetness.
The bacon, while not crispy, tossed in a light smokiness. The box might say "uncured bacon," but there's a little cured bacon thrown in as well. Both types were chopped finely and hard to distinguish from the beef.
The beef blended in with the sauce and left a firm meatiness to everything.
Overall, while Chili's Nacho Potatoes aren't quite nachos, it does offer quite the variety of flavors and textures paired with an unexpected kick. Just to see, I tried the meaty-cheesy sauce with a tortilla chip though and it didn't quite work. Fortunately, it tastes great with the potatoes.
