Review: Pieology - Cheese Pizza

Pieology is a chain of custom, fast-fired, artisan-style pizza joints that have been all the rage lately (at least here in L.A.). I tried their Classic Cheese Pie, which comes simply topped with olive oil, red sauce, and mozzarella.

It was $6.45 for the roughly 11.5-inch pizza.

As you can see, the sauce and cheese coverage was a little spotty and the cheese especially was MIA. While the spread was a bit off, I could taste the simple red sauce in every bite and it was nice. Not so much with the cheese. Quite a number of bites left me feeling like I was eating bread and sauce. What little there was tasted good though (If you go, I recommend policing your cheese distribution for something a bit more balanced).

It may sound weird for me to say, but the crust was too... flat. It lacked character and texture. There was a nice crispiness at the edges, but towards the center it was overly chewy.

Overall, Pieology makes a decent, and still enjoyable, cheese pizza but there were too many miscues with the one I got to consider ordering it again.
