News: Panera Bread Featured 2012 Spring Menu

Panera Bread is returning a seasonal menu dish and showcasing two new ones this Spring.

Returning is the soup and salad combo of Low-Fat Chicken Tortilla Soup and Cuban Chicken Panini. The soup is made corn and roasted Poblano peppers, black beans and tomatoes, seasoned with dried chili peppers, cumin, and lime. It's finished with a topping of tri-colored tortilla strips.

New is the Roasted Turkey Fuji Apple Salad which is made with all-natural roasted turkey, mixed field greens, romaine lettuce, vine-ripened tomatoes, red onions, pecans, Gorgonzola, and apple chips, dressed with a white balsamic apple vinaigrette.

Finally on the smoothie side, there's the new Low-Fat Peach Nectar Smoothie with Ginseng, a smoothie featuring peach nectar puree with ginseng, blended with organic, low-fat Stonyfield Farm vanilla yogurt and ice.

Of course there are other new and returning stuff that isn't being promoted front and center.

On the bakery side, there's new Carrot Cake with Walnuts; filled and topped with cream cheese icing.

For breakfast, there's the new Mediterranean Egg White on Ciabatta. It features egg whites, Vermont white cheddar, roasted tomatoes, fresh spinach, and basil pesto on freshly-baked Ciabatta.

Salmon returns for the Spring with the Salmon Club Croissant, the Mediterranean Salmon Salad, and the Salmon Caesar Salad

The Salmon Club Croissant is made with a salmon filet, Applewood-smoked bacon, lettuce, tomato and tomato aioli.

The Mediterranean Salmon Salad gives you a salmon filet, field greens, romaine, kalamata olives, feta cheese, mandarin oranges, almonds, red onions and a honey tangerine vinaigrette.

Finally, the Salmon Caesar Salad comes with a salmon filet, romaine, Asiago, homemade Asiago Cheese croutons and Caesar dressing.
