Frozen Friday: Healthy Choice - Crustless Chicken Pot Pie

Healthy Choice's Crustless Chicken Pot Pie is inspired by a Top Chef Season 10 challenge winner according to the box and features "chicken tenderloins with carrots, corn, peas and dumplings in a pot pie sauce."

A 10.25-ounce box was $2.00 on sale.

When you take away the crust from pot pie, it pretty much becomes chicken and dumplings, which is basically what you have here. Before you ask, the dumplings do not make up for the lack of flaky pie crust. In fact they make the meal worse.

The little dough dumplings come in irregular shapes and most were a little dry and chewy and a few were really chewy (like chewing on bark). There's also no flavor to them other than what they pick up from the sauce.

The sauce was a little underwhelming. It was bland with just the barest hints of chicken and cream. It feels like a healthy choice, but not in a good way.

On the plus side, while one or two carrots dried a little during cooking, the vegetables retained a good amount of fiberous texture that you wouldn't get in a pot pie. It gave them a little more substance and flavor than the stewed variety.

Along with the moist and lightly seasoned chicken, they were the best parts of the meal.

Overall, Healthy Choice's Crustless Chicken Pot Pie was a miss on the pot pie front, but I'd happily eat the chicken and vegetable portions of the meal minus the awful dumplings.
