Frozen Friday: Stouffer's - Farmer's Harvest Chicken & Parmesan Pasta Bake

Stouffer's Farmer's Harvest Chicken & Parmesan Pasta Bake comes with a vegetable medley side which seems to be standard for all of the Farmer's Harvest line: a blend of broccoli (or green beans), carrots, and red peppers in a butter sauce.

A 12-ounce box runs around $3.99 but I picked it up on sale for $2.

The bake is essentially melted mozzarella and parmesan cheese over white meat chicken over spaghetti. Do keep in mind that it's Chicken and Parmesan and not Chicken Parmesan and as such there is no breading on the chicken.

The fairly sizeable chicken was on the dry side and just slightly hard (for chicken) as a result.

The whole grain spaghetti noodles were decent, but the tomato sauce was not my favorite; just slightly too tangy and salty. I liked the melted cheese but the dish as a whole failed to satisfy.

Vegetables retained a fair amount of flavor and showed up with some firmness that was well complemented with the buttery sauce. I've had varying experiences with the Farmer's Harvest which have on occasion been too mushy, but they turned out quite alright here.

Bottomline: good veggies, but the chicken and parmesan pasta bake not so much.
