Frozen Friday: Lyfe Kitchen - Farmer's Market Frittata

Lyfe Kitchen's Farmer's Market Frittata frozen meal features a skillet-cooked low-yolk egg frittata with mushrooms and goat cheese plus a sweet potato and mango hash and a spicy garden salsa with poblano chiles.

A 10-ounce box retails for $4.99, but I found this on sale for $2.50.

The box notes that the eggs used are cage-free and the dish comes in a paper parchment steam pouch that can be cooked in the microwave or oven. It's easy enough to cook with no holes to poke, no stirring, or rotating necessary. You just have to slide and shimmy it out of the bag once it's done.

It's marked as "vegetarian," which might work for those vegetarians that are okay with egg and cheese.

The meals looks a good deal like the picture on the box, except I wasn't able to keep the hash and salsa from mixing.

The egg was cooked well but a little too busy for me. There's a nice flavor from the green onions and cheeses (goat cheese, ricotta, mozzarella, and parmesan), but also too much various texture including a bit of an undesirable graininess from the ricotta.

The hash and salsa ended up blended together with the hash offering the taste of slow-roasted vegetables and veering close to being mushy. The salsa added a notable kick with some tanginess and a slight bit of sweetness. The various vegetables/fruits retained just a touch of firmness and a good deal of flavor.

Overall, Lyfe Kitchen's Farmer's Market Frittata was just okay for me and fairly pricey for the an individual frozen meal. I liked the hash and salsa well enough but can't get behind the texture of the egg. It also feels a little too much like something you could whip up in short order at home.
